German Pancakes


Whenever I don't know what to make for dinner I usually end up making breakfast because, who doesn't love breakfast for dinner? This German Pancake recipe is my FAVORITE! They're so buttery, crisp, warm, tasty and so easy to make.

I had trouble making these in the past because I was using a glass pan. I finally figured out that they cook the best in an iron skillet. I use a 9 or 10 inch one (mine isn't real iron and it still works). They puff up perfectly in a pan like this. So before you begin make sure you have the right pan, that's the key. Now here's the recipe:

German Pancakes:

1/4 cup butter (melt in pan)
3 eggs
3/4 cup milk
3/4 cup all-purpose flour

Directions:

1 - Preheat oven to 425 degrees. Place butter in skillet and heat in oven until butter is melted.

2 - Beat flour, milk, and eggs in a mixing bowl.

3 - Pour batter into hot skillet. Return skillet to oven and bake for 20 minutes. It will rise like a soufflĂ©, then fall a bit when taken out of the oven. Lightly dust with powdered sugar, drizzle with syrup, and serve.

Melt butter in oven
Add 3/4 cup flour in mixing bowl

Add 3/4 cup milk
Beat in 3 eggs
Until mixed well

Pour batter into melted butter
Bake in the oven at 425 degrees for 20 minutes
Pancake will puff up like a soufflé and go down once it's taken out of the oven
Serve with powdered sugar, syrup, fruit, jam, etc.--whatever sounds good to you.
